June Food Journal Challenge

I am challenging myself to keep a food journal in the month of June.

June 1:

Exercise – I completed day one of exercise which was 15 minutes of running.  Here is a description from the plan


bowl of Quaker Oatmeal Squares with Blue Diamond vanilla almond milk

Clif Mojo bar in peanut butter pretzel

leftover piece of chicken (seasoned with Cajun seasoning) with a sandwich thin, a Fuji apple with about 1 T of almond butter, about 2 T sun dried tomato hummus with some pita puffs

a chocolate cherry smoothie with 1/2 banana, 12 frozen cherries, 1 cup of almond milk, 1/2 scoop vanilla whey protein powder, 2 T Nesquick, and a handful of ice

black bean burger made with 1 T salsa and 1 T flour mashed and cooked on medium heat until warm and brown on the outside.  served on a sandwich thin with about 1 T BBQ sauce and some Annie’s mac & cheese on the side

That’s all I’ve had so far today.  The husband just ran to the grocery store so there is a chance that there may be some ice cream in the future.  If there is, I measure out a portion of ice cream and serve it in a tiny dish with a small spoon.  This will help me savor it more 🙂

June 2:

Exercise – I haven’t done anything yet.  I have been feeling awful all day with sinus pressure and headache so I slept for 2.5 hours when I got home from work.  Today is supposed to be 5 miles on the bike so I think I’ll do it here in a bit around the neighborhood.

tortilla wrap with leftover bean burger, salsa, and cheese.  an apple with almond butter

turkey burger with stuffed with herbed goat cheese and topped with peaches that had been sautéed with butter and sugar on a sandwich thin.  about 1 potato’s worth of baked oven fries

a small scoop of peanut butter gelato topped with a sprinkle of Nequick powder (I want some more!!)
